Yes, it's pretty tasty :). If you want to make the coconut milk, boil some filtered water, let it sit to cool a bit, maybe five minutes. Then add 2 cups of the hot water to 1.5 cups organic, unsweetened shredded coconut in a bowl. Let sit for about 1/2 an hour, then put that into a blender, add another cup of hot water and blend thoroughly, on the highest speed, for about 2 minutes. Pour mixture through a cloth-lined sieve into a bowl, and squeeze as much liquid out of the coconut pulp as possible. Then I pour it into a glass juice bottle and keep it in the fridge. It keeps for about 5 days to a week, depending on how cold your fridge is.
I could use a latte like that!

ReplyDeleteDoesn't sound too difficult. Thanks!
ReplyDeleteThat sounds really good! Lily looks so cute!
ReplyDeleteI know, doesn't she look funny? She snitched the piece of scone right after I took that photo, that's why it's so blurry, because she was in motion.
ReplyDeleteHaha that is funny! Lucky dog getting delicious scone!
